Peggy's Rice Pilaf

Note:  This is a fast and easy rice dish to make - should be ready in 30 minutes.  A few sliced almonds on top when you are ready to serve the rice would be a nice addition.

1/4 cup onion, diced

4-oz. can drained mushrooms or 1/4 cup fresh chopped mushrooms

1 tablespoon butter

1 cup raw white rice

1 cup chicken broth

1 cup water

1/2 teaspoon salt

handful of frozen French-cut green beans

In a large frying pan, gently sauté onion and mushrooms in butter until onion is translucent.  Add rice and sauté until the rice begins to turn white, but not browned.  Add chicken broth, water, salt, and frozen French-cut green beans.  Stir to combine.  Bring to a boil, cover, turn heat to low, and cook 20 minutes without peeking.  Yum!
