Pistachio Pecan Sandies

Note:  You can use a white cake mix and vanilla instant pudding mix with this recipe, or try chocolate cake and chocolate instant pudding mix with walnuts or chocolate.  Easy and fast recipe.  The cookies don't run all over the place and are crispy all the way through.

18.25-oz. box of yellow cake mix

3.4-oz. box instant pistachio pudding mix

1 large egg

1 cup Wesson Canola Vegetable Oil

1 cup finely chopped pecans

Dump cake mix and pudding mix into a large mixing bowl.  Use a large spoon to stir in the egg and vegetable oil.  Stir in pecans, using your hands as needed to form a ball of dough.  Roll dough into 1-inch balls, flattened slightly, and bake on a greased cookie sheet in 350 degree oven for 10 to 12 minutes.  Allow cookies to sit on cookie sheet one minute before removing to wire rack to cool.  Makes 3 1/2 dozen cookies.
