Fried Chicken Home-Style

Note: Use Chef Billy Parisi's recipe to make fried chicken.  The coating will stay on and if fried first and then finished off in the oven, the coating won't be burnt and the chicken will be juicy.  Excellent!!!  Visit Chef Billy Parisi's web site at

2 chickens, each cut into six pieces for frying
1 1/2 cups vegetable oil for frying

Bowl 1: (mix ingredients together)
2 cups flour
1 tablespoon cayenne pepper (or 1 teaspoon to start)
1 tablespoon paprika
salt and pepper to taste

Bowl 2: (Mix ingredients together)
2 cups milk
2 eggs

Bowl 3: (Mix ingredients together)
2 cups Italian bread crumbs
2 tablespoons parsley
2 tablespoons garlic powder
2 tablespoons onion powder

Bread chicken, first in flour mixture, then milk/egg mixture, then in bread crumb mixture.  Fry in hot vegetable oil a few pieces of chicken at a time, turning once, until chicken is browned, but not cooked though. Remove chicken from oil, and place on a large baking sheet.  Bake in 350 degree oven until chicken is cooked through, 8 - 15 minutes, depending on size of chicken.  Do not overbake. If juices run clear when a knife is inserted, chicken is done.  Excellent.
