Cream of Mushroom Soup

This recipe was given to me by Diana Horton 1/9/2006.  You can use canned or fresh mushrooms.  This soup is very good and super easy to make.  Serves 2.

1/4 cup butter
3/4 cup onions, diced
2 cups fresh mushrooms, chopped
2 tablespoons flour
1 cup half and half
1 cup chicken broth
salt and pepper to taste

In a saucepan over medium heat, sauté onions in butter until onions are translucent.  Add mushrooms and sauté another 2 minutes.  Stir in flour and cook another 3 minutes.  Slowly add half and half and broth to mixture, stirring until flour and butter are mixed in.  Simmer for about 5 minutes.  Salt and pepper to taste.
