Anna's Mini Rigatoni Bake

1 pound Rigatoni (1 1/4-inches), cooked al dente according to package directions

15-oz. Ricotta Cheese

2 large eggs

1 tablespoon parsley

8-oz. shredded Mozzarella Cheese

2 (1 pound) cans Hunt's original style Traditional Spaghetti Sauce

1 1/2 pounds ground chuck (20% fat)

1/2 teaspoon garlic powder

1 teaspoon Italian seasoning

Cook Rigatoni al dente, rinse briefly with cold water in colander.  Stir in the Ricotta cheese, eggs, parsley, and Mozzarella Cheese.  Set aside.

In a large frying pan, brown hamburger. Sprinkle with garlic and Italian seasoning.  In a 9 x 13 baking pan, pour 1 cup of spaghetti sauce.  Stir rest of spaghetti sauce into the hamburger mixture.  Simmer about 10 minutes.  Place Rigatoni mixture over sauce in baking pan.  Top with hamburger mixture.  Bake in a 350 degree oven for 30 to 40 minutes or until mixture bubbles.  Let stand about 20 minutes before eating.  This recipe is great left over and reheated.  Very filling.
