World's Best White Pecan Fudge

1 cup white granulated sugar

1/2 cup butter, no substitutes

1/2 cup heavy cream

1/8 teaspoon salt

2 cups confectioners sugar

1 teaspoon vanilla

1 cup pecans, chopped

Lightly butter an 8x8-inch baking dish.  In a medium-size saucepan, bring the sugar, butter, cream, and salt to a boil over medium heat, stirring constantly.  Continue to boil and stir for 5 minutes.  Take off heat and stir in the confectioners sugar and vanilla until mixture is smooth.  Stir in pecans.  Spread in buttered dish and refrigerate for no more than 1 hour.  Cut immediately after removing from refrigerator.  Let sit out and fudge will continue to set.  It will be too hard to cut if left refrigerated over an hour.  This recipe makes one 8x8-inch pan of the most delicious fudge in the world.
