Any size Roast on a rack
salt and pepper to taste.
Season with Minced Garlic, Garlic Powder or Garlic Salt. (I also use optional seasonings like rosemary . . whatever you like, etc.)
Place beef in roasting pan uncovered and put in 375 degree oven for one hour AND THEN TURN OFF. DO NOT OPEN THE OVEN DOOR FOR ANYTHING! Before serving, turn oven on to 300 degrees.
45 MINUTES before serving the roast will be RARE DONE
50 MINUTES before serving the roast will be MEDIUM DONE
55 MINUTES before serving the roast will be WELL DONE.
Let sit 15 minutes before carving.
