You can make chocolate pudding cookies with chocolate chips and chocolate pudding, or butterscotch pudding cookies with butterscotch bits.
1 cup butter, softened
3/4 cup firmly packed brown sugar
1/4 cup white granulated sugar
2 large eggs
1 (3.8-oz.) package instant pudding, chocolate or butterscotch
1 teaspoon vanilla
2 1/4 cups white flour, sifted
1 teaspoon baking soda
12-oz. package chocolate chips or 11-oz. package butterscotch chips
1 cup chopped pecans
In a large bowl, cream together the butter, brown sugar, white sugar, and eggs. Mix in dry instant pudding mix, vanilla, flour, and baking soda. Stir in chips and nuts. Place heaping teaspoons on greased baking sheet and bake in 350 degree oven 8 to 10 minutes. Makes 4 dozen.
