Mary Lou's Fruit Cake
(Mary Lou Williams)

1 pound butter, softened
1 pound white granulated sugar
10 large eggs
4 cups flour, sifted
1 pound candied whole cherries (red &green)
1 pound candied pineapple, cut up
1 pound white raisins
1 pound pecan halves
1 pound walnut halves
1 cup Amaretto liqueur
White KaroŽ syrup

In a large bowl, mix ingredients together, saving a few cherries and nuts for top decoration.  Distribute batter  into 7 small greased bread pans (2/3 full).  Bake 1 hour at 275 degrees or until a toothpick inserted comes out clean.  Remove bread from oven and brush top of loaves with white KaroŽ  syrup and decorate with pecans/cherries.  Put decorated bread back in oven for 5 more minutes. Let loaves rest in pan for 10 minutes then remove to wire rack.  When loaves are cool, wrap in wax paper and then aluminum foil.  Leave cakes sit for 2 or 3 days to mellow.
