Kirk's Chili

1 pound cubed stew meat (get leanest meat as possible)

1 pound ground beef

4 to 6 cloves of fresh garlic (added at different times)

1 cup onion, diced

1 pound fresh mushrooms, sliced

48-oz. can whole tomatoes, crushed

16-oz. can tomato sauce

14 1/2-oz. can light red kidney beans

1 tablespoon oregano

1 tablespoon basil

1 to 2 tablespoons chili powder (start with 1 tablespoon)

2 bay leaves

1 can beer (optional) - I don't drink so I left it out

salt and pepper to taste (Kirk uses lots of pepper, but add a little at a time to taste)

In a large frying pan over medium heat, brown stew meat without any added fat.  It will make its own juice.  Add ground beef, half of the garlic, onion, and mushrooms.  Cook until meat is brown meat and the mushrooms are cooked through.  Add the tomatoes, tomato sauce, kidney beans, oregano, basil, chili powder, and rest of garlic, bay leaves, and beer if you want.  Simmer for one hour, stirring frequently.  Salt and pepper to taste.  Remove bay leaves before serving.
