Honey Crisp Chicken

This recipe was given to me by Barb Waterman.

4 boneless chicken breasts

c crushed corn flakes or Ritz crackers

1 beaten egg

4 T butter

c honey

2 t soy sauce


Coat chicken in the beaten egg and then coat the chicken in the crushed corn flakes and repeat again.  Place the chicken in a deep pan and bake for 25 minutes @ 350.

Meanwhile melt the butter in a small saucepan.  Stir in the honey and soy sauce.  Let the sauce come to a gentle boil and remove from heat. 

Pour the sauce over the chicken and place in the oven to bake for another 10 minutes. 

This sauce is delicious over mashed potatoes, noodles or rice.
