Fluffy White Icing
This recipe was given to me by Jane Kester. She said that it is her son Miles' favorite. When my husband and I ran a dairy farm, Miles used to get off of the school bus and help gather sap for making Maple Syrup. I made this recipe one day before going to work and took it to work for my co-workers to enjoy. I received this recipe on September 18, 2004, and first made it on October 6, 2004.
3 egg whites
3/4 cup white granulated sugar
6 tablespoons light corn syrup, or maple syrup
1/2 teaspoon salt
1 cup shredded coconut, for topping
In the top of a double boiler, over boiling water, place the egg whites, sugar, syrup, and salt. Beat with an electric mixer or hand rotary beater four to five minutes until mixture stands in soft mounds. Remove from heat and cool to lukewarm. Add 1 teaspoon vanilla and beat until frosting stands in peaks. Spread on cooled layers of cake and sprinkle with coconut.
