Simple Napa (Chinese) Cabbage Salad
This recipe was given to me by Deb Ritchie, July 22, 2005. Deb and her husband Stewart run a Certified Supported Agriculture (CSA) share program. Their web site is www.nativeofferings.com. Deb says that this is a fresh, "perky" salad for a lite lunch or a nice side for a summer dinner. Make sure you use Chinese cabbage, not regular cabbage.
1 napa cabbage, thinly chopped
salt to taste
2 tablespoons rice vinegar
small onion, finely chopped
1 bunch of cilantro, finely chop leaves (discard stems)
Place thinly chopped cabbage in a large bowl, Add salt to taste and rice vinegar. Let cabbage sit for 3 to 5 minutes before adding onion and cilantro. Serve immediately.
