Black Bean Burgers

Note:  Mix these burgers together at least an hour before frying them in a little oil (I used a little coconut oil).  Eat burgers plain, or in buns.  This is a definite keeper recipe for me. You don't have to cook them all at once. - Cella

Burgers (Makes 8):
3 (16-oz.) cans black beans, rinsed, drained
1 1/2 cups uncooked regular oatmeal
1/2 cup onion, diced
2 Jalapeno peppers, seeded and finely diced
3/4 cup fresh cilantro, diced
2 large eggs
1 teaspoon salt

1/4 cup all-purpose white flour
1/4 cup cornmeal

In a large mixing bowl, use a potato masher to mash rinsed and drained black beans, leaving nice size chunks.  Mix in oatmeal, onion, peppers, cilantro, eggs, and salt.  Place in refrigerator for at least one hour.  Form bean mixture into 8 patties.  Combine the flour and cornmeal in a small bowl.  Coat both sides of patties in cornmeal mixture.  Fry patties in hot oil in skillet over medium heat until browned on both sides.
